I made this soup last night, my variation of jamie olivers chickpea and chorizo sausage soup, i had neither so is used lentils , chicken breast and ham.....
- pressure cook lentils with some garlic - in another big pot put in some olive oil, onion , garlic and chicken pieces cook for 15 mins - then add a bunch of spinach, sweet corn, plenty of tomatoes add the boiled lentils and as much stock as you need, a lil tomato puree gives it better consistency .
let it simmer for about 40 -50 minutes add some ham salt pepper
ladle it into soup bowls and put bits of cheese and grated boiled egg on top....
voila a great and delicious soup to soothe the body and soul and very very healthy
